The collection is still carried out by hand: farmers pick the olives using ladders, brushes, and nets.
Starting from the tree, to the press, till the bottling: the olive oil is produced respecting strict guidelines to ensure high quality.
The grinding of the olives is done mechanically. A continuous pressure exerted on the olives created the paste from which the oil was extracted in the end.
The elaboration of the olives and the final product take all place within 12 hours to ensure the organic and nutritional quality. After long decantations in silos made of stainless steel, the oil gets be bottled in dark glass.
